Efficiency and ergonomics in the kitchen workspace are back in vogue, but they are nothing new to kitchen design. I always get a thrill when I see photos of former kitchens with features that are now considered new and exciting Universal Design features – when they are really just ideas that where lost or forgotten from long ago. Certainly, there were some components of this kitchen that were found to be unworkable (isolation of the cook, lack of room for more than one person, rigid organization) but some ideas that should have been retained. Look for items such as multi-height work spaces, areas for seated work, storing dishes and tools near the sink, clear floor space below sink and work counter….
